Paneer-Stuffed Peppers with Rice Tadka Recipe, as it doesn’t sound, is easy to make. Here is the step by step guide on how to make Paneer-Stuffed Peppers with Rice Tadka.
This vegan recipe is very easy. All it requires, love and focus and of course the ingredients 🙂 . The main ingredients are red and green capsicums or peppers, paneer, hung curd and rice and a few more.
This recipe is completely a sort of innovation and combination of my thoughts and ingredients. So here goes this bharwan shimla mirch or paneer-stuffed peppers with rice tadka recipe that would do wonders.
I had made paneer-stuffed peppers in microwave and cooked rice on gas stove; the rice-stuffed capsicum was grilled for 5-7 minutes.
How to Make Paneer-Stuffed Peppers
Let us start with paneer-stuffed peppers first. You can make the rice tadka later; it’s super easy.
Time taken: 1 hours 30 minutes (including marination time); serves 2.
Ingredients for Stuffed-Paneer Capsicums
- 250 gm Paneer
- 2 Red Bell Peppers or Capsicums
- 1 Yellow Bell Pepper cut in squares
- 5 tbsp hung curd or thick yogurt
- 1 tbsp ginger garlic paste
- 1 tsp ajwain
- 1 1/2 tsp kashmiri red chili powder
- 1/2 tsp zeera powder
- ½ tsp garam masala powder
- 1 tsp dry mango powder/amchur powder
- 1/2 tsp chat masala
- 1 tsp black pepper powder or kali mirch powder
- 1 tbsp lemon juice
- 2 tbsp refined oil or ghee for brushing
- salt to taste
- Dhania or coriander leaves to garnish
- 1/2 cup finely chopped onion
- 4 tbsp finely chopped Tomato
Cut around 125 gm of paneer in very small and thin pieces. Dice the rest of the Paneer. Take a pan, fill in some water and bring it to boil. Divide the water in two bowls and add small and thin slices of paneer in one bowl and the diced paneer in another one.
Soak them for at least 10 minutes and then take out. Retain the water; we will use it later while making rice.
Now take another bowl add all the ingredients – hung curd, ginger-garlic paste, ajwain, salt, lemon juice, chat masala, amchur powder, zeera powder, kashmiri lal mirch, black pepper powder and mix well. Again divide into 2 bowls. Add the thin and small slices of paneer in one and diced paneer in the other. Mix well and refrigerate this marinade for 30 minutes.
After 30 minutes of marination, take the thinly sliced paneer’s bowl out.
Take red bell peppers and remove the seeds. Now apply oil inside the bell pepper with a brush and stuff paneer. Add coriander leaves in one layer, onions in one layer and then tomato in another layer. Then again add paneer. Coriander leaves will give a nice aroma and flavour. Repeat the same process for the second red bell pepper too.
Apply oil with a brush on the outside of bell peppers. Handle with care! The bell peppers will be slippery. Cook it in microwave. Once it is cooked, keep it aside.
Now take the other bowl in which we had kept the diced paneer marinade and add diced yellow bell pepper. Take a skewer, dip it in warm water for 10 minutes. Now add the slices paneer and yellow bell pepper one by one alternatively. We have to grill this.
If you don’t have a skewer just keep the paneer and yellow bell pepper’s slices alternatively on the grill plate. Grill it.
The stuffed-paneer peppers are done. Let’s proceed to rice tadka recipe.
How to Make Plain Rice Tadka
This is not as flashy neither has many spices. As I told, previously, I made this in order to eat something beautiful, tasty and something that came out of my heart, not mind 🙂 . The authentic rice tadka recipe is way different.
Here goes the list of ingredients.
Ingredients for Rice Tadka
- 1 1/2 cup Rice
- 1 Green bell pepper
- 2 pinch Salt
- 2 tbsp refined oil for brushing and cooking
- 1 tsp zeera
- 1 tbsp oil
- 1 tsp Zeera (cumin seeds)
- 2 slit green chillies
Remember the water we had retained after soaking the paneer? Yes, we need it now. In a sauce pan, add that retained water, add rice and salt. We need to cook the rice. If more water is required, add more water and cook the rice. After 10-15 minutes of cooking you can throw the excess water. This way the starch will be removed to. Now cook rice on sim for 5 more minutes. Stir in between. Rice is cooked.
Method for Rice-Stuffed Paneer
Take green bell pepper and remove the seeds. Apply oil inside the bell pepper. Put rice in the bell pepper. Add a layer of zeera and pour some oil. Again add rice. Layering is done. Apply the oil on the outer side of bell pepper and grill for 5 minutes.
The rice-stuffed pepper is ready!
Take rest of the rice in a plate; you can shape them in round or square.
For tempering: Heat oil in a small wok, add zeera. Let it splutter. Add green chilli and fry for 10 seconds. Put it on rice.
Everything is ready!!
