Sweet Corn Methi Sandwich For Breakfast

Here is one of the Sandwich ideas for a healthy Breakfast. I wanted to have something greeny and something like sandwich in breakfast today. So, tried this recipe and bingo! it was absolutely how I had thought! I made this Breakfast Sandwich with main ingredients – multi-grain bread, Methi (also known as Fenugreek) leaves, and sweet corn. It’s easy, tasty and filling. I don’t think you will be able to eat more than 2 pieces (maximum). I say two because, you won’t be able to take your hands off from the sandwiches. Well! control! control!

Here’s the easy recipe for Sweet Corn Methi Sandwich.

Serves 4 People

For the Sandwich

  • 150 gm Sweet Corn
  • 50 gm Methi leaves (Fenugreek leaves)
  • 8 Slices of Sandwich Multi-grain Bread (you can take plain/brown bread too)
  • 5-6 Ginger Juliennes
  • 1/4 tbsp black pepper powder (kaali mirch powder)
  • 1/2 tbspn black salt (or according to your taste)
  • 1/2 tbsp Amchur powder (dried mango powder)
  • 1/2 tsp zeera powder (cumin powder)
  • 2 tspn oil/ghee + some pure ghee to apply on bread
  • 1/4 tbsp Kashmiri lal mirch

For Sauce

  • 1 and 1/2 tsp Tomato Sauce
  • 1 tsp Chilly sauce
  • 3-4 tsp May0nnaise

How to Prepare the Stuffing for Sandwich

Boil sweet corn for 10 minutes on high flame. Meanwhile, cut fenugreek/methi leaves in small pieces, wash and keep it aside. Now, strain sweet corn and wash it in running water for 30 seconds. Take a pan, add 2 tsp oil or pure ghee, heat it for 20 seconds and put the sweet corn in the hot oil. Now add kaali mirch powder, amchur, black salt, kashmiri lal mirch, zeera powder, ginger juliennes to sweet corn.Saute it for 1 min. Now add methi leaves to sweet corn – methi will leave some water when mixed with sweet corn – and saute for 5 minutes or till the water evaporates.

How to Prepare the Sauce for Sweet Corn Methi Sandwich

Mix all the sauces – tomato, chilly and mayonnaise – together in a bowl. Stir it with spoon. There should be no lumps in the sauce. If lumps are still there stir more and mix well. Sauce is Ready.

Now take a bread slice and apply a thick layer of sauce on it. Evenly spread a thick layer of stuffing and cover it with another slice of bread. Apply ghee to your sandwich maker and put this in the sandwich maker. And here it is! A healthy Sandwich ready for Breakfast.
